Victoria sandwich cake

Recipe

100g margarine
100g caster sugar
2 eggs
100g Self raising flour

1. Heat the oven to 180C.
2. Cream margarine and sugar until light and fluffy.
3. Beat in eggs one at a time adding a little flour with each.
4. Fold in remaining flour.
4. Place mixture into a silicone round cake tin and bake for 20 mins.
5. when cool fill with jam and dust with icing sugar.


Note: I make the mixture twice once for the bottom of the cake and then the top, this way I find you get a better quality to your finished cake.
